Peach Jam

This is a great family favorite! Jam using peaches can be tricky as it usually doesn't set well and makes better syrup. This is a fool proof recipe using a familiar but unlikely ingredient.

6 cups mashed fruit
3 cups sugar
2 (3 ounce) packages jello peach (orange works too) gelatin
1 tablespoon lemon juice (optional)

Directions: Mix fruit and sugar in large pan. Bring to a boil for 3 minutes. Stir in Jello until completely dissolved. Pour into freezer containers and freeze. Makes about 3-4 pints.

Note: Although the Extension Service does not recommend this ....I like to store the jam in decorative canning jars for gifts. I heat the jars and lids in a hot water bath before adding the hot jam, then invert for about 15 mins. Turn right side up to seal. I've never had any issues with the jars not sealing properly.
